Indian agriculture is in the throes of a paradigm shift, thanks to the structural changes in the Indian economy. With the country achieving self-sufficiency in grains production, emphasis has changed from subsistence farming to commercialization, opening up vast opportunities for value-addition, packaging and exports, with a strikingly high level of technological involvement.

The holistic concept of food security, however, has two dimensions – availability of food and access to food. While the former has been achieved, the same is not the case with the latter. Despite bumper crops, distribution of food grains continues to be faulty – almost 30% of the food produced in the country is wasted. In such a scenario, it is important for us to reorient our historical agricultural policy framework – from managing shortages to promoting efficiencies and value addition. Moreover, there is a need to increase the range of foods available to improve overall nutrition. The benefits in terms of health, vitality and productivity are obvious, and cannot be underestimated.

Recipe for Watergate Salad

Watergate salad made its debut on the American food scene in the mid-1970s. Although I’m hard-pressed to find a connection between this sweet and creamy Jello and Cool Whip salad and the Watergate Hotel break-ins, perhaps there is one. Or perhaps the Watergate salad recipe got its name from another source.The traditional Watergate salad recipe includes just pistachio pudding, pineapple, marshmallows, nuts and Cool Whip. This recipe for Watergate salad also includes coconut.

Ingredients:

  • 1 20 oz. can crushed pineapple
  • 1 3.5 oz. package pistachio pudding and pie filling
  • 2 cups miniature marshmallows
  • 1/2 cup chopped pecans
  • 1/2 cup sweetened flaked coconut
  • 2 cups frozen whipped topping (such as Cool Whip), thawed

Preparation:

  1. Drain the pineapple, reserving 1/4 cup of the juice.
  2. Place the pineapple and reserved juice in a large bowl. Add the pudding mixes, miniature marshmallows, pecans and coconut. Stir well.
  3. Gently fold in the whipped topping until the mixture is well-combined, but not soupy. Refrigerate until ready to serve.

Makes 8 servings.

Note: This recipe can be made up to a day in advance.
